Favourite Mexican dish?

    • I'm entering a Mexican themed cook-off and thinking of ideas, so just wondering what dishes my fellow 9HZers enjoy

      you you can't beat a nice fajita in my opinion although i am a fan on "meal in a tortilla" burrito.

      whatever you choose...toasting irons are probably a dealbreaker. additionally, with mexican there is no such thing as too much.

      big green chillis stuffed with cheese, then battered or breadcrumbed, then deep-fried

    • but even then, that's a side dish where i come from...sounds awesome. what sort of cheese?

    • I make an awesome chilli

      Cook off some red onion and a shed load of garlic, bung in some chopped chillis (how many depends how hot you want it), chuck in some minced beef and cook til brown. Add a tin of kidney beans in chilli sauce and a healthy dollop of tomato puree, stir it all in. Add chilli powder and paprika to the required heat. Stir in a teaspoon of dijon mustard and a healthy teaspoon (more like a tablespoon) of peanut butter then just let it simmer for a bit. Serve it up with rice or with warmed taco shells with some shredded lettuce, guacamole, salsa, grated cheese and soured cream.

      Try it, the peanut butter makes it.

      the 100% cacao? i keep meaning to pick some of that up for such things. i can imagine it would be off the hook.

    • Chocolate works really well in a chilli, peanut butter sounds amazing too, never thought of that.

    • it has to have Cumin in it if it's chilli , that's a no-brainer.
      I can't believe I used the term ' no-brainer'
      Try and get some chipotle chillis which are smoked jalapenos. That combined with cumin paprika and a bit of chocolate gives an amazing smoky taste. Chopped coriander stalks make a nice crunchy sprinkling to top it off.
